Pinch's traditional Chinese dumplings are 100% made from scratch in-house daily. We take pride in kneading and rolling our own dough, grinding our own meat, and hand-pinching each of our dumplings every day. There is simply no comparison to a freshly made, freshly cooked dumpling.

What Is Pinch?

Pinch, at its soul, is an open invitation to our family's kitchen table.  Diners have come to expect the same uninspired,  predictable pork meatballs offering no variety yet suffering a complete lack of traditionalism and respect for their origins. We at Pinch plan to break that conception completely and redefine the dumpling itself. By combining more than three generations of traditional Northern Chinese dumpling recipes with the freshest locally sourced and organic ingredients, we fundamentally believe we can change the way Americans eat dumplings. We want to show how

these morsels of meat and dough can be so much more than the sum of their parts.

What ultimately sets Pinch apart from every other Chinese food purveyor is our single minded focus on the dumpling. Our inspiration and product come from the time-tested recipes developed by one of our owners’ family for more than half a century, and we are ready to share them with the world. Our commitment to hand crafting every dumpling, from rolling the dough to pinching them closed, distinguishes us from all others.

The Dumpling.

Our dumplings run the gamut from a base set of traditional recipes, utilizing classic and time tested meat and vegetable combinations, to bolder flavors packed with exotic yet authentically crafted spices and ingredients. Pinch's ever dynamic menu will feature traditional pork dumplings as well as various combinations of lamb, beef, crab and vegetable dumplings throughout the year.  Additionally, special seasonal dumplings such as pumpkin in the fall and squash in the summer will be a part of our rotation.  Pinch has more than 20+ dumpling recipes that we believe will reshape the landscape of Chinese food forever in America. 


Vegetarian & Vegan Dumpling.

Contrary to popular belief, vegetarian and vegan foods have been a staple of Chinese cuisines.  For the vast majority of Chinese history, most people lived as peasants and were rarely able to afford meat. Chinese cooks’ use of tofu and meat substitutes range back much further than today’s vegan / vegetarian fads. Pinch is ready and willing to carry the torch in this regard by always having a vegetarian / vegan option on our menu every day we are open. We believe it not only serves our customers well, but shares the well-seasoned and delicately created vegan and vegetarian options that Chinese people have enjoyed for decades.

We source from local farmers. The vast majority of our meats come from Ayshire Farm of Upperville, Virginia and Liberty Farms of Northern Baltimore County, Maryland.  All animals are locally raised in free-range and humane conditions.  We genuinely believe that the quality of the meat we utilize in our dumplings is one of the most important factors in determining the quality of the dumpling itself, and our customers also realize the difference. Ultimately, as sales volume allow, we will seek to grind our own meat, so as to increase our control over the quality of cut and fat ratio that goes into our dumplings.

Ayrshire’s mission today is to bring livestock and crop production to both self-sufficiency and profitability. Additionally, there is a commitment to achieving these goals using Certified Humane®, organic, sustainable farming methods, preserving genetically viable herds of the various rare breeds, and contributing to seed pools for heirloom plants. The soil is being constantly amended with cover crops and compost from the three-acre compost facility. As a part of their training, the Ayrshire Shires help in the constant task of soil improvement, keeping the skills of horse-powered farming alive.
